Two hobbies, one constraint: a 12 V compressor fridge plus a few USB loads, often in the cold, sometimes a long walk on ice. Gasoline is rude in a parking lot and illegal in a hut. Weight and discharge temperature matter more than a 2000 W microwave inverter.

The 12 V path
A portable fridge often wants the car socket, not the AC inverter. Using 12 V avoids inverter losses. Every model above lists a car port (Jackery 10 A class; EcoFlow 126 W class on several sheets). Match the fridge’s current to the port. We do not have your fridge’s label; read it.
Cold
AC180’s −20°C discharge is the number ice fishermen will screenshot. Jackery v2 discharge is −10°C. RIVER 2 Pro discharge is 14°F (−10°C). Charge floors remain ~0°C. Bring the pack up to the hut warm, run it, take it home to charge. Details: winter charging.
Tailgate watts
Electric griddles and kettles are 1000–1500 W toys. 1000 v2 (1500 W) and AC180 (1800 W) are the sheets that even allow the conversation. RIVER 2 Pro is 800 W rated; X-Boost is a maybe, not a catering plan.
